'The Persistence of Memory' by Salvador Dali. I've loved it ever since I was a kid and saw it parodied in cartoons and stuff! Only just learnt the name recently though - up til then it was always 'that melty clock picture'!

I also love 'The Scream' by Edvard Munch. ^^

Although this may be a bit farfetched, I love Dan Ariely's book Predictably Irrational. I find that it's incredibly intriguing and imaginative to come up with such fascinating experiments towards furthering the development of Behavioral Economics.
